  • 1 cup wheat flour
  • 1 cup boora (special sugar used in laddu)
  • 3/4 cup ghee
  • 1/3 cup or 100g gond
  • 10 – 12 cashew nuts
  • 2 tbsp muskmelon seeds
  • ¼ tsp cardamom powder

How to make laddu:

  1. Prepare the Ingredients: With the help of a grinder, crush the gond and chop the cashew nuts into pieces.
  2. Fry the Gond: Heat the ghee in a wok over medium-low flame. Fry the gond in small batches until it puffs up completely. Let it cool, then crush it coarsely with a rolling pin.
  3. Roast the Wheat Flour: Use the remaining ghee to roast the wheat flour in the wok over medium-low flame. Stir continuously until the flour turns brown and gives off a pleasant aroma. Let it cool.
  4. Roast the Seeds: Warm a tablespoon of ghee in a wok, then add the muskmelon seeds and roast them until they are golden brown. Be sure to cover the wok as the seeds will pop.
  5. Mix the Ingredients: Add the roasted seeds to the wheat flour, along with the crushed gond, cashew nuts, and boora. Mix everything well.
  6. Form the Laddus: While the mixture is still warm, pinch portions and shape them into laddus of the desired size.

Ingredients for halwa:

  • 1/4 cup freshly grated coconut
  • 1 cup coconut milk
  • 1/4 cup ghee
  • 1/2 cup semolina (rava)
  • 10-12 chopped almonds
  • 10-12 raisins
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 cup crumbled mawa (khoya)

How to make Halwa:

  1. Roast the Semolina: Heat ghee in a broad, non-stick pan. Add the semolina and fry on a medium flame for about 7 minutes or until it turns light brown.
  2. Add Nuts and Coconut: Add the grated coconut, chopped almonds, and raisins. Fry for another 3 minutes on medium flame.
  3. Mix in Liquids and Sugar: Add sugar, coconut milk, and 1 cup of water. Combine thoroughly and cook over medium heat for 7-8 minutes, stirring constantly, until all the moisture evaporates.
  4. Add Flavorings: Add cardamom powder and crumbled mawa. Mix well and cook for another 2 minutes on medium flame, stirring constantly.
  5. Serve: Once done, turn off the heat and serve the sheera hot.

Sweet Kozhukattai is a Ganesh Chaturthi sweet in South Indian dumpling made with rice flour and jaggery.
